Postcards #32 & #33: Belarus

It just so happens that both the postcards I received From Belarus were from the same recipe series. Although I haven’t tried the recipes on the cards, they both sound really good. I love cheese and potatoes… I’ll type the recipes here in case they’re too hard to read.

Babka (Potato Pie)

Ingredients

  • 10 potatoes, 1 egg, 1 onion
  • 2-4 strips of bacon cut into lardons
  • sour cream, butter
  • 1/2 tbsp. salt, 1/4 tbsp. pepper

Instructions

  • Fry cut tenderloin
  • Fry lardons until golden and crispy and drain on a paper towel
  • Fry chopped onion seasoned with salt until slightly golden
  • Grate potatoes to make a mash and drain the liquid
  • Add 2 tablespoons of sour cream, salt, pepper, onions, and bacon
  • Butter a baking dish and fill it with the mixture
  • Bake for 20 – 30 minutes until cooked
  • Serve hot or warm with sour cream

 

Syrniki (Cheese Pancakes)

Ingredients

  • 2 eggs, 500g Cottage Cheese
  • 1.5 cups Flour
  • 1 packet of Baking Powder
  • 6-7 tbsp Sugar, 1/3 tsp Salt
  • Sunflower Oil

Instructions

  • Mix all the ingredients
  • Knead the dough
  • Make the required shape for pancakes
  • Heat oil in a frying-pan
  • Fry pancakes over low heat with the lid on
  • Serve them with sour cream
